This baked Camembert cheese recipe will serve about 4 people. Sorry if you are an out and out paleo this one is not for you.
I think I watched a TV program where Jamie Oliver demonstrated this recipe. I have to say the end result is really tasty, also it is an impressive dish to serve at a dinner party, it goes down well as part of the cheese course.
Double or treble the recipe if you have more guests coming by buying a bigger Camembert.
Usually, with his melted recipe, you would offer your guests cubes of bread or large croutons to dip into the melted cheese. As an alternative, for us low carbers I recommend using a selection of chopped low carb vegetables.
1 tablespoon olive oil
1 fat clove of garlic peeled and thinly sliced
4 fresh rosemary sprigs just the small end tips.
To serve with the baked Camembert
Platefuls of chopped up fruits and vegetables.
Whole cherry tomatoes or quartered tomatoes
Little gem lettuce leave (pick out the firmer ones)
Peppers red sliced into chunks or slices
Chunks or slices of apple or pear (sprinkle with lemon juice to stop going brown)
Whole red or green grapes
A separate bowl of chopped up mixed nuts.
To make: Baked Camembert
Switch on and set the oven to 220C/425F/Gas 7
The Camembert cheese comes in a wooden box. This is really handy as we are going to cook the cheese in this box.
In Jamie Oliver’s recipe he recommends removing the top layer of skin from the Camembert, I don’t bother with this.
Instead I take the wooden lid off the Camembert and remove the whole cheese from the wooden box. Then take off the waxed paper and pop the cheese back into the wooden box.
Into the top of the Camembert poke through the slivers of garlic right through the skin and into the cheese, then poke in the rosemary sprigs, but leave some of the rosemary leaves sticking out.
Sprinkle over the olive oil.
Place into the hot oven for about 20 minutes.
The cheese is done when melted and is oozing.
To eat offer your guests skewers or long thin forks so they can spike the pieces of fruit or vegetables onto the end of a skewer, then dip these into the melted Camembert cheese, followed by a dip into the chopped nuts.
