Cauliflower mash is a useful low carb standby when you are following a ketogenic diet. It is one of those low carb vegetable dishes that can make a replacement for mashed potatoes when serving your meals. I use frozen cauliflower simply as it is cheaper than fresh, but fresh cauliflower is good too. There are loads of version of this mash around this was one I just quickly flung together so quick I didn’t even take any photos! Portion any leftovers and freeze.
Cauliflower Mash Recipe
I made up a Cauliflower Mash Recipe as follows
1.5kg frozen cauliflower
100g coconut milk
Salt
1 tablespoon vegetable bouillon powder
1 1/2 tablespoon Madras curry powder
Method
The cauliflower was boiled in water until tender.
The water was drained away leaving about 50ml. Add the coconut milk, bouillon powder and curry powder, mash thoroughly.
I make a big bowl of this enough to last a week putting any extra in the freezer to keep.
