Here is my recommendation and a recipe on how to cook pork chops in a cast iron skillet. I’m a recent convert to cooking with cast iron. I have always been resistant to using cast iron as I always thought they would be difficult to use and difficult to clean.
However, for Christmas, I received Nigella Lawson’s book called “Simply Nigella” and in many of her recipes, she recommends using cast iron cookware. These days you can buy cast iron that is pre-seasoned, and with a little bit of care, they are actually surprisingly easy to use and clean. I also bought a brilliant book that I thoroughly recommend called “Cook it in Cast Iron” which explains in great detail how to clean, maintain and cook with cast iron. So I purchased my first cast iron pre-seasoned skillet and I haven’t looked back.
Here is a nice simple low carb pork chops recipe. This is a quick and easy meal you can whip up any work day evening.
Keto Pork Chops in Mustard Sauce Recipe
4 Pork Chops approx weight 0.7kg bone in (about 1lb 11 ozs)
1 1/4 cups or 300mls heavy cream
1 tablespoon grain mustard
3/4 cup or 200ml chicken stock or bone broth
2 tablespoon lard
Season pork chops with salt on both sides.
Place chops in the cast iron skillet dot with lard.
I only had room for 3, I had to put one chop in a separate baking dish.
Cook in the oven at 375 F or 190C until the fat is browned and the meat is cooked around 30 minutes.
To Make the Keto Creamy Mustard Sauce
Remove the chops to a warm plate.Tip out the fat from the skillet.
Tip out the fat from the skillet.
Place on burner and deglaze the skillet with the chicken stock (deglazing is using the stock to dissolve all the cooking juices and caramelized pieces from the bottom of the skillet).
When the stock is bubbling add the cream and grain mustard.
Bubble until the sauce is thick and creamy.
Pour sauce over the pork chops and serve.
