I like to buy my ground beef at 20% fat. Less fat than this can result in the burgers turning out dry once cooked. You can also make these with other ground meats like lamb, bison, elk or fatty pork, or experiment with a mixture of different ground meats.
I don’t normally use egg to bind the mixture I find if you cook from frozen this is not necessary, but add an egg if you prefer.
Another top tip is to use a large diameter burger press the reason i like patties that are over 4 1/2 inches in diameter is that the cooking of the patty usually incudes some kind of shrinkage.
Basic Keto Low Carb Easy Quick Hamburger Recipe
25 ozs/0.75kg 20% Ground Beef (or other fatty meat)
1 1/2 tsp Fine Grain Pink Himalayan Salt
1 egg (optional)
Mix together the ground beef, egg (if using) and salt.
Form into patties either by hand or using a hamburger press.
I like to make thin patties (each patty is 60g or 2.1 ozs) so this mixture makes about 12 hamburgers, but make them the size you want.
To freeze place the patties on a tray or plate in a single layer and place in the freezer. Once frozen put the burgers in a polythene bag.
I like to cook my hamburgers from frozen, but you can let them thaw first. In a skillet melt lard (about 1 tablespoon or so) and cook the patties on a high heat until nicely browned on both sides.
One option is to add a slice of cheese to the top of the cooked side once you flip the burger over.
I like to serve my burgers with fried eggs and sometimes fried bacon.

To the basic recipe add 100g/4ozs of finely chopped bacon to the mixture. Either chop by hand or run the bacon through a food processor until the bacon is finely chopped. Delicious.
