✅Cabbage and Bacon Keto Side Dish Recipe

Of all the keto vegetable dishes I still find that a mixture of cabbage and bacon is top. This recipe makes one of those great keto side dishes for chicken.

Ingredients – Serves 4

450g or 1lb finely shredded savoy cabbage

50g or 2oz streaky bacon cut into small pieces.

1 large onion chopped finely

2 cloves of crushed garlic

2 tbsp olive oil

Salt and pepper to taste

Method

Heat the oil in a frying pan and fry the onion and bacon together for around 5 minutes. Add the garlic and continue to fry for around 2 minutes.

Add the shredded cabbage and cook the cabbage for about 10 minutes. Add a lid at the beginning to allow the cabbage to steam.

Season to taste with salt and pepper to taste.

The cabbage is done when it is tender, that is the point of a knife will not meet any resistance when the cabbage is pierced.

✅Low Carb Keto Roasted Kohlrabi Recipe

Kohlrabi is a vegetable that is closely related to the turnip. It is a strange looking vegetable but don’t let that put you off. This dish is delicious as a side dish with roast meats.

Ingredients – Serves 4

700g or 1 1/2lbs kohlrabi peeled and diced into 1″ dice.

1 tbsp olive oil

4 cloves of crushed garlic

Salt and pepper

Method

Pre-heat the oven to 200C/400F.

Place the diced kohlrabi into a roasting dish, add the olive oil, crushed garlic, salt and pepper and mix together well.

Roast for 30 – 35 minutes.

✅Keto Broccoli with Herb and Garlic Butter Recipe

Ingredients Serves 4

450g or1 lb broccoli

25g or 1 oz butter

A couple of tablespoons of fresh herbs, e.g. parsley, thyme, chives.

3 cloves of garlic crushed.

Salt and pepper.

Method

Trim the broccoli, by cutting the florets off the stems.

Peel the broccoli stems so that you remove all the tough skin. Chop the peeled stems into rough 1/2″ dice.

Set up a vegetable steamer, by bringing in a few inches of water to the boil in a steaming pan.

Add the broccoli florets and cubed broccoli stems to the steamer insert and steam until just tender, try not to over

cook.

In a frying pan melt the butter and add the garlic then warm through for a minute, then add the herbs to the butter.

Once the broccoli is tender place into a serving bowl and pour over the butter and herb mixture, gently mix through.

✅Gratin of Tomatoes and Zucchini (Courgettes) Recipe

This is a delicious mixture of zucchini (courgettes), tomatoes and Gruyere cheese.

Ingredients – 4 servings

2 medium zucchini (courgettes) – cut into 1/4″ slices

4 medium tomatoes – ripe. Cut into 1/4″ slices

100g Gruyere cheese grated

Tomato sauce – ingredients

1 clove garlic crushed

2 tablespoon olive oil

400g tin of chopped plum tomatoes

20g basil leaves shredded finely

Method 

To make the tomato sauce, cook the garlic in the olive oil for about a minute, then add the

tin of tomatoes.

Simmer stirring occasionally until the tomato mixture thickens, add the basil at the end of the cooking time.

Place this tomato mixture into a gratin dish. Over the top of the tomato sauce place the courgettes and tomatoes in overlapping rows. Sprinkle the Gruyère cheese all over the top of the dish.

Cover the dish with foil and place into the oven for 20 minutes. Then remove the foil and

continue cooking for another 20 minutes. The finished dish should be hot and bubbly and the cheese should have melted and have taken on a brown color.

✅Low Carb Garlic Cheese Stuffed Mushrooms

This delicious low carb recipe that is just so quick and easy to make.

Ingredients – 4 servings

4 large mushroom caps

1 packet Boursin cheese

Method

Trim the stems of the mushrooms.

Place the mushrooms onto a baking tray gills upwards.

Fill the caps with a quarter of the Boursin cheese per mushroom.

Bake at 170C/325F for about 15 – 20 minutes, until the Boursin cheese has melted and has taken on a bit of color, by this time the mushrooms will be cooked through.
