Best Spatchcock Chicken Recipe

Here is my attempt at producing the best spatchcock chicken recipe by Nigella Lawson

I thought I would give this recipe from Nigella Lawson’s books Nigella Bites called spatchcock chicken. In her recipe, she prepares the chicken, then marinades it and cooks the chicken on the BBQ.

However, I just cooked the chicken in a normal oven. This recipe turned out really well – nice moist and tasty chicken with a crispy skin.

You need to marinade for around 24 hours but if short on time you can get away with as little as 3 hours.

After the marinating period remove the chicken from the bag and place onto a roasting tray.

In the spatchcocking process, the bird is flattened therefore making the cooking a lot faster, this helps to keep the flesh moist.

Spatchcocking is also known as butterflying. I would certainly recommend that you give this a try it is much easier than it looks.

I have tried to take some photographs to show the process, as in this case, pictures are easier to follow than words. One piece of equipment you definitely need is a good and sturdy pair of kitchen or all-purpose scissor or poultry shears. If you have a friendly butcher they would do this for you.

I have seen recipes for spatchcocking were the bird is held open with metal skewers I have never found this necessary.

Spatchcock Chicken Recipe – Ingredients

Small 1.5 kg chicken.

8 cloves of garlic minced

A handful of black peppercorns.

Freshly squeezed juice from one lemon

3 tablespoons olive oil

Spatchcock Chicken Recipe – Method

Take the chicken and turn it breast side down, cut through both sides of the backbone. Remove the backbone and open up the chicken flipping it over and pressing down on the breast side so that the chicken is flattened.

To make the marinade, crush the peppercorns and place these into a sturdy Ziploc bag, add the lemon juice, garlic and olive oil, then add the chicken.

Place the marinade and chicken into the bag.

You need to marinade for around 24 hours however you can get away with as little as 3 hours.

After the marinating period remove the chicken from the bag and place onto a roasting tray.

Heat the oven to 220C 425F, then cook the chicken for around 35 minutes, check the meat is done by checking that the juices run clear of blood, alternatively if you have a meat thermometer the internal temperature needs to reach 160F or 70C.

Eat this with chicken with salad so yummy.
