Chicken Kebab Recipe: Spicy Chicken and Vegetable Kebabs

This is a great chicken kebab recipe to make chicken breast meat tasty and moist. The marinade permeates the chicken and makes every bite a moist tasty morsel. Let’s face it chicken breast meat can be pretty tasteless and prone to drying out.

I would recommend that you buy flat stainless steel skewers, using these stops that annoying habit of the chicken pieces spinning around when you turnover the kebabs during cooking.

If you don’t have flat skewers these then the next best idea is to use round skewers in pairs about 1 inch apart. Bamboo skewers need to be soaked in water before use to prevent burning.

This makes a good dish to put onto the BBQ.

Chicken Kebab Recipe: Spicy Chicken and Vegetable Kebabs

Ingredients – serves 6

4 garlic cloves chopped

50g fresh ginger root peeled and roughly chopped

1 red chilli chopped seeds and membrane removed

1 lime – grate the zest and squeeze the juice

1 orange – grate the zest and squeeze the juice

4 spring onions roughly chopped

1 tablespoon runny honey

2 tablespoons soy sauce

2 tablespoons olive oil

5 large chicken breasts – skinned and boned, cut into large cubes.

3 courgettes cut into 20 pieces

20 small cherry tomatoes

3 large red peppers, cut into 20 pieces, seeds and membrane removed.


To make the marinade.

Place the garlic, orange zest, lemon zest, spring onions and ginger. Process this mixture until it becomes a smooth paste. Add the lime juice, orange juice, soy sauce, honey and olive oil and blend again.

Place the chicken cubes into a polythene bag and add the marinade.

Marinade for up to 24 hours in the fridge for at least 1 hours, turning he polythene bag over occasionally to spread the marinade evenly.

Thread the vegetables and chicken onto skewers, either cook on a griddle pan or a BBQ for about 8 minutes. Until done.

Eat with a salad and coleslaw.
