I have been watching reruns of Top Chef season 5.
One of my favorite chefs on Top Chef has been Carla. In season 5 she made the final but messed up her final dishes so sadly she didn’t win.
In one of the challenges, Chef Carla makes a winning dish which she calls Green Eggs and Ham. The inspiration for her dish comes from the children’s stories by Dr. Seuss.
Carla put her green eggs and ham over brioche but I feel we can dump the bread and just stick to the ham and eggs, to make this dish low carb and gluten free.
Green Eggs and Ham
Ingredients – serves 4
200g fresh spinach cooked and squeezed dry, chopped finely
4 egg yolks
4 egg whites
300g thick slices of ham, diced.
1 tablespoon chives
Salsa – Ingredients
1 tomato skinned de-seeded and chopped into small dice
1 small chilli chopped finely
2 cloves garlic chopped finely
1 teaspoon chives cut finely using scissors
salt and pepper
1 large roasted green pepper, skinned and seeds removed.
200g olive oil
Mix the spinach and egg whites together.
Pour the spinach mixture into 4 stainless steel rosti rings.
Carefully adding the egg yolks into the centre of each ring.
Cook until the egg whites have set.
Saute the ham, until hot, add the chives.
Make a parsley and green pepper oil by adding the parsley and the roasted green pepper, with 200og of olive oil blend until smooth and well mixed. Add salt to taste.
Add the parsley and jalapeno oil to the other salsa ingredients. season to taste.
Place the cooked ham in a heap on a plate, cover with the green eggs, drizzle over the green salsa.
